  • Coat the inside of an 8×8-inch pan with cooking spray and line the bottom with a square of parchment paper, leaving a slight overhang. Set aside.
  • In a medium saucepan, dissolve the sugar, 1 1/2 cups water, and 2 tsp lemon juice over medium heat, stirring until clear. Bring to a boil, then reduce heat to low and continue cooking until the syrup reaches 240°F (soft ball stage) on a candy thermometer (approximately 15 minutes). Turn off the heat and set aside.
  • In a separate Dutch oven or large saucepan, whisk together 2 cups pomegranate juice, 1 cup water, 1 cup cornstarch, and 1 tsp lemon juice for the base. Cook over low heat, whisking constantly, until the mixture thickens significantly and becomes a thick paste, pulling away from the sides of the pan.
  • Carefully and slowly whisk in the prepared sugar syrup into the thickened base, adding it in half-cup increments. Ensure each addition is fully incorporated and smooth before adding more, preventing lumps. Once all syrup is added, continue to cook on very low heat for an additional 45 minutes, stirring frequently. The mixture will continue to thicken and reduce considerably, becoming translucent and sticky.
  • Remove from heat and stir in the 1/4 cup chopped pistachios and the orange blossom water (or rose water). Carefully pour the Turkish Delight mixture into the prepared pan, spreading it evenly to the edges with an offset spatula. Allow to rest at room temperature for 1 hour. Then, cover the pan tightly with plastic wrap and refrigerate for a minimum of 4 hours, or until thoroughly chilled and firm.
  • In a medium bowl, mix together the 3 tbsp powdered sugar and 3 tbsp cornstarch for the coating. Liberally sprinkle a clean cutting board or work surface with this mixture. Use a rubber spatula to gently loosen the edges of the chilled Turkish Delight from the pan. Invert the pan onto the dusted cutting area. Carefully peel off and discard the parchment paper.
