Instructions

Prep

  1. Line a plate with paper towels to drain cooked shrimp after frying. Wash and ensure shrimp are cleaned, peeled, and deveined, leaving the tail on each shrimp.
  2. In a shallow dish, whisk together the flour, salt, Chinese Five Spice, and white pepper. In a separate shallow dish, beat the eggs. In a third shallow dish, mix together panko breadcrumbs and shredded sweetened coconut.

Assemble

  1. Holding each shrimp by its tail, dredge it completely in the seasoned flour mixture, shaking off any excess. Dip the floured shrimp into the beaten eggs, letting excess drip off. Then, coat it thoroughly in the panko and shredded coconut mixture, gently pressing to ensure it adheres well. Place the coated shrimp on a wire rack. Repeat with all remaining shrimp.

Fry

  1. In a large cast-iron skillet (or heavy-bottomed pan), pour vegetable oil to a depth of about one inch. Heat the oil over medium-high heat until a kitchen thermometer registers 350°F (175°C).
  2. Working in small batches to avoid overcrowding, carefully add the breaded shrimp to the hot oil. Fry for 1 to 2 minutes per side, turning as needed, until they are beautifully golden brown and cooked through.
  3. Using tongs or a slotted spoon, transfer the cooked shrimp to the paper towel-lined plate to drain excess oil. Serve immediately with Sweet Chili Sauce or Thai Peanut Sauce.
