  • 1 tbsp garam masala seasoning optional
  • ½ tsp kosher salt
  • 1 cup dried chickpeas or canned (See Note 1)
  • 1 1/2 cups water

Instructions 

  • Set your Instant Pot to Sauté mode and add the ghee or vegetable oil. Sauté the diced red onion, fresh ginger paste, minced garlic, and green chile. Cook for approximately 5 minutes until the onion is translucent and the garlic becomes aromatic, forming the flavorful base.
  • Add the diced tomatoes, chana masala spice blend, ground cumin, ground turmeric, optional garam masala seasoning, kosher salt, the drained chickpeas (soaked or canned), and 1 1/2 cups of water. Stir all ingredients thoroughly to combine.
  • Secure the Instant Pot lid and ensure the vent is in the “Sealing” position. Set the Instant Pot to “Bean/Chili” mode. Cook for 35 minutes if using pre-soaked dried chickpeas, or 10 minutes if using canned chickpeas.

    Once cooking is complete, allow a Natural Release of pressure for 20 minutes. After 20 minutes, perform a Quick Release for any remaining pressure before carefully removing the pressure cooker lid.

  • For a thicker gravy, use the back of a spoon or a potato masher to mash some of the chickpeas directly in the pot, which will naturally thicken the curry to your desired consistency.
  • For an extra layer of authentic flavor, you may add dried fenugreek leaves (kasuri methi) and dry mango powder (amchur) at this stage. Change the Instant Pot setting to Sauté mode and let the mixture boil for 5 minutes to reduce and further intensify the flavors.
