Sausage and Spinach Baked Gnocchi Casserole

This baked gnocchi is my go-to when dinner needs to be fast, simple, and made on one pan. Potato gnocchi roast until golden alongside crumbled sausage, red onion, garlic, and bright lemon zest. A handful of spinach finishes the dish, and freshly grated Parmesan and lemon wedges at the table make it sing. It’s an unfussy, repeat-worthy meal.

Gnocchi are small Italian dumplings, typically made from potatoes and flour. They’re usually simmered until tender and dressed with sauces like tomato, brown butter, pesto, or cream. For this recipe the gnocchi roast in the oven to develop crisp edges and pick up flavor from sausage and vegetables. Served as a main or a hearty side, baked gnocchi pairs well with roasted vegetables, sausage, and grated cheese.

When you want a real dinner without a long commitment, this sheet-pan baked gnocchi is the kind of rustic meal that answers the call. The sausage seasons the whole pan as it roasts, onions caramelize in spots, lemon zest adds depth while fresh lemon brightens the finished plate, and spinach wilted into the hot mixture makes everything more balanced.

Tip From Kevin

Foil lined

I like lining a rimmed baking sheet with foil for easier cleanup. Be careful if you’re using a metal spatula to toss ingredients in the pan—foil can tear and let juices leak. If you skip the foil you’ll need to scrape and deglaze the pan to capture those roasted juices, which is delicious but dirtier. Either way works—choose what suits your patience level.

Ingredient Notes and Substitutions

(Check the recipe card for the full ingredient list and quantities)

  • Potato Gnocchi: Shelf-stable potato gnocchi crisps nicely in the oven. Refrigerated varieties work too but may cook a bit faster.
  • Italian Sausage: Hot Italian sausage gives the dish spice and richness. You can use mild or chicken sausage, but ensure there’s enough fat to flavor the pan.
  • Red Onion: Roasts to sweet, caramelized spots. Yellow onion or shallots are acceptable alternatives.
  • Baby Spinach: Wilts quickly and blends into the dish. Kale can be used if you prefer a heartier green.
  • Olive Oil: Helps everything roast evenly and carries flavor across the pan.
  • Red Pepper Flakes: Add gentle heat; adjust to taste.
  • Parmesan: Freshly grated Parmesan adds a salty finish that melts into the hot gnocchi.
  • Lemon: Use both zest and wedges. Zest adds savory brightness during roasting while fresh lemon juice at the table lifts the finished dish.

How to Make Sheet Pan Gnocchi

  1. Prep the pan: Preheat the oven to 400°F and line a rimmed baking sheet with foil.
  2. Build the base: On the sheet pan, toss sliced red onion, minced garlic, and gnocchi with olive oil, kosher salt, and red pepper flakes so everything is evenly coated.
  3. Add lemon & sausage: Zest the lemons over the mixture, slice the lemons into wedges for serving, then remove sausage from casings and crumble into roughly 1-inch pieces. Scatter the sausage over the gnocchi.
  4. Roast: Bake about 40 minutes, tossing halfway through, until the sausage is cooked and the gnocchi and onions have browned in spots.
  5. Add spinach: Stir the baby spinach into the hot pan with tongs or a spatula and return to the oven for 5 minutes to wilt.
  6. Finish & serve: Sprinkle with grated Parmesan and serve with lemon wedges for squeezing at the table.

Recommended Tools

  • Rimmed baking sheet: Keeps ingredients contained and helps with even roasting.
  • Microplane or zester: For fine lemon zest.

Storage and Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. The gnocchi will soften as it absorbs juices, but flavors continue to develop.

To reheat and restore some crispness, spread the gnocchi on a baking sheet and warm at 350°F for 10–15 minutes. A skillet over medium heat works quickly and can re-crisp edges. The microwave is fastest but will yield a softer texture—heat in short bursts and stir between intervals for even warming.

Frequently Asked Questions

Can I boil the gnocchi first?

No—this recipe is written for roasting gnocchi straight from the package. Skipping the boiling step saves time and helps the gnocchi develop crisp edges in the oven.

Why isn’t my baked gnocchi getting crispy?

Overcrowding the pan is the most common reason. Spread ingredients in a single layer so moisture can evaporate and allow browning.

Do I have to toss the pan halfway through?

Yes. Tossing redistributes oil and sausage juices so the gnocchi and onions brown more evenly and prevents sticking.
