Experience the rich culinary tapestry of the Levant with an elevated classic: Lebanese Kawarma. This extraordinary dish transforms humble creamy hummus into a gourmet experience, crowned with perfectly seasoned ground lamb (or beef) and brightened by a vibrant mint, parsley, chili, and lemon sauce. It’s a symphony of textures and flavors, making it an ideal choice for a sophisticated appetizer or a hearty main course that truly impresses.

Lebanese cuisine is renowned for its vibrant flavors, aromatic spices, and wholesome ingredients that never fail to satisfy. Each dish tells a story of tradition and passion, often serving as the centerpiece of family gatherings and celebrations. Kawarma, a delightful preparation featuring hummus topped with succulent, spiced meat, perfectly embodies this culinary philosophy. It’s a testament to how simple components can be combined to create something truly magnificent and memorable.
Our ground lamb recipe is a flavorful journey, generously infused with a meticulous blend of authentic Middle Eastern and Mediterranean spices. This careful selection of aromatics results in a robust, deeply satisfying flavor profile that complements the creamy base. The accompanying hummus is luxuriously smooth and nutty, providing the perfect canvas for the savory meat. To complete this masterpiece, a bright, zesty (and optionally spicy!) lemon herb sauce is drizzled generously over the top, cutting through the richness and awakening every palate with its fresh tang.
For an unparalleled Kawarma experience, we highly recommend utilizing our homemade Mediterranean Hummus. Its creamy texture and balanced flavor provide the ideal foundation for this dish. The unique character of the spiced lamb is largely attributed to our distinctive Lebanese Zaatar Spice Blend, a simple yet potent mix that is incredibly easy to prepare at home in larger batches, making store-bought versions pale in comparison. Finally, serving Kawarma with warm, freshly baked Middle Eastern pita bread creates the ultimate authentic pairing, perfect for scooping up every delicious bite.
While classic plain hummus forms a wonderful base, don’t hesitate to experiment with flavor variations. As beautifully captured in the accompanying images, we often prepare a vibrant cilantro-jalapeño flavored hummus to add an extra layer of complexity and a mild kick. To create this delightful twist from a single batch of hummus (whether homemade or store-bought): simply remove half of the prepared hummus from your food processor and set it aside. Then, add one bunch of fresh cilantro and two seeded jalapeños to the remaining hummus in the processor and blend until smooth. This allows you to serve both the traditional plain hummus and the invigorating green variety, offering your guests a delightful choice and a stunning visual contrast on the plate.

What is Kawarma? Understanding this Savory Lebanese Delight
Kawarma, sometimes spelled Qawarma, refers to a popular Middle Eastern dish, most famously associated with Lebanese cuisine, that marries the creamy indulgence of hummus with a rich, savory meat topping. Traditionally, it involves finely seasoned ground lamb or beef, cooked until tender and aromatic, then generously spooned over a bed of smooth hummus. The dish is often further enhanced with a bright, zesty herb sauce and crunchy garnishes, transforming a simple dip into a fulfilling and exquisite meal or a standout appetizer on any mezze spread.
This heartwarming combination is more than just a dish; it’s an experience. The tender, spiced meat offers a comforting warmth, while the cool, nutty hummus provides a soothing contrast. The fresh herb sauce adds a burst of freshness and acidity, balancing the richness of the meat and hummus. Common garnishes, such as freshly chopped parsley and mint, contribute vibrant color and an extra layer of herbaceousness, while toasted pine nuts introduce a delightful crunch and a subtle, buttery flavor that elevates the entire presentation.
Kawarma holds a special place in Levantine culinary traditions, often enjoyed as part of a lavish mezze (small dishes) spread or as a satisfying main course, especially when paired with warm pita bread. It’s a dish that speaks of hospitality, comfort, and the profound flavors characteristic of the region.

Ingredient Spotlight: Notes, Flavor Profiles, and Smart Substitutions
Crafting the perfect Kawarma begins with understanding each ingredient and its unique contribution to the overall harmony of the dish. Here’s a detailed look at the components and how you can adapt them to your preferences:
- Creamy Hummus – The foundation of our Kawarma, hummus provides a smooth, nutty base. You can choose to make your own fresh hummus for the best flavor and texture, or opt for a high-quality plain store-bought version for convenience. As demonstrated, you can elevate your hummus by creating two distinct flavors from a single batch:
- **Plain Hummus:** Classic and comforting.
- **Cilantro Jalapeño Hummus:** For an invigorating twist, blend half of your prepared hummus with one bunch of fresh cilantro and two seeded jalapeños. This variation adds a vibrant color and a pleasant, mild heat.
- Rich Seasoned Ground Lamb – This is the star protein of Kawarma, offering a savory, earthy depth. It’s sautéed in a luxurious blend of butter and olive oil, creating a perfectly browned and tender topping. The lamb truly shines with a bold infusion of specific herbs and spices:
- Fresh Mint – Provides a distinct cooling sensation and a sweet, aromatic freshness that beautifully complements the lamb.
- Flat-leaf Parsley – A peppery, bright herb that adds an aromatic lift. If unavailable, fresh cilantro makes an excellent substitute, offering a slightly different but equally appealing flavor profile.
- White Wine Vinegar – Introduces a crucial tangy and subtly fruity note, helping to tenderize the meat and brighten the overall flavor. Red wine vinegar or rice vinegar can be used as alternatives.
- Ground Allspice, Cinnamon, & Nutmeg – This harmonious trio infuses the lamb with a complex tapestry of warm, earthy, slightly bitter, fruity, woody, and sweet undertones, creating that signature Middle Eastern depth.
- Zaatar Spice Blend – A quintessential Lebanese spice mix. For an authentic and incredibly fragrant result, we highly recommend making your own Zaatar at home. Its unique combination of thyme, oregano, marjoram, sumac, and sesame seeds is far superior to dull, pre-packaged blends.
- Black & White Pepper – Using both types of pepper adds a nuanced complexity to the heat and aroma. Black pepper provides a pungent, robust warmth, while white pepper offers a milder, earthier heat.
- Zesty Lemon Herb Sauce – This bright, invigorating sauce is the perfect counterpoint to the rich lamb and creamy hummus, bringing a refreshing acidity and a spicy kick. It’s a simple blend designed to elevate the entire dish:
- Fresh Lemon Juice – The cornerstone of the sauce, providing essential tanginess and freshness.
- Flat-leaf Parsley – Adds a vibrant, herbaceous flavor and a beautiful green hue.
- White Wine Vinegar – Reinforces the acidity, adding another layer of brightness.
- Jalapeño – When seeded, it provides a pleasant, moderate heat without overwhelming the other flavors, adding a subtle warmth.
- Minced Garlic – Delivers a pungent, aromatic punch that enhances the savory elements.
- Red Pepper Flakes – Offers a consistent, peppery heat that can be adjusted to your preferred spice level. Cayenne pepper is a suitable alternative if you prefer a different kind of heat.
- Salt – To perfectly balance and enhance all the flavors in the sauce.
- Elegant Garnishes – The final touches that add texture, flavor, and visual appeal:
- Toasted Pine Nuts – These buttery, crunchy nuts provide a delightful textural contrast and a subtle richness.
- Reserved Chickpeas – A sprinkle of whole chickpeas (leftover from making hummus) adds visual appeal and a familiar, soft texture.
- Fresh Mint and Parsley Sprigs – For a final burst of color and aromatic freshness.

Crafting Kawarma: A Step-by-Step Guide
Follow these detailed steps to create a show-stopping Lebanese Kawarma that will delight your family and guests:
- Prepare and Marinate the Lamb Mixture. In a large mixing bowl, combine the ground lamb with all the listed spices, chopped mint, parsley, salt, and white wine vinegar. Use your hands to thoroughly mix the ingredients, ensuring the spices are evenly distributed throughout the meat. This hands-on approach helps to infuse the lamb with maximum flavor. Once mixed, cover the bowl and transfer it to the refrigerator to marinate for at least 30 minutes. This crucial step allows the flavors to meld and deepen, resulting in a more aromatic and tender cooked meat.
- Whisk Together the Lemon Herb Sauce. While the lamb marinates, prepare the bright and zesty lemon herb sauce. In a small bowl, whisk together the fresh lemon juice, chopped parsley, white wine vinegar, finely chopped seeded jalapeño, minced garlic, salt, and red pepper flakes. Stir everything until well combined. Set this vibrant sauce aside at room temperature, allowing the flavors to marry and intensify while you complete the other components of the dish.
- Toast the Pine Nuts to Golden Perfection. Heat a small, dry skillet over medium-low heat. Add the pine nuts and toast them gently, stirring frequently, until they turn a beautiful golden brown and release their fragrant aroma. Be careful not to burn them, as they can quickly go from toasted to bitter. Once golden, immediately remove them from the pan to a small plate, sprinkle with a pinch of kosher salt, and set aside. These will add a delightful crunch and nutty flavor as a garnish.
- Sauté the Seasoned Lamb. Place a large skillet or cast-iron pan over medium-high heat. Add the butter and olive oil and allow the butter to melt and shimmer. Once hot, add the marinated ground lamb mixture to the pan. Using a wooden spoon or spatula, break the meat into smaller pieces as it cooks. Sauté, stirring regularly, until the lamb is thoroughly browned and cooked through, which typically takes several minutes. Ensure there are no pink areas remaining. Once cooked, set the meat aside.
- Artfully Plate the Hummus. To serve, spoon a generous amount of the plain hummus onto the center of each individual serving plate. For an appealing presentation, press down gently in the center of the hummus with the back of your spoon, then rotate the plate and spoon in opposite directions simultaneously to create an elegant swirl or well. If you are using the cilantro-jalapeño flavored hummus, scoop a layer of it on top of the plain hummus and repeat the swirling process. This creates a beautiful two-toned effect. Finally, generously sprinkle the warm, seasoned ground lamb mixture over the swirled hummus layers.
- Drizzle with Sauce and Garnish. Drizzle a generous amount of the prepared lemon herb sauce over the lamb and hummus. The vibrant green sauce will add both flavor and visual appeal. Finish by sprinkling the toasted pine nuts and any reserved whole chickpeas (if using) over the top as a final garnish. A few fresh mint or parsley sprigs can also be added for an extra touch of freshness.
- Serve and Enjoy! Present each beautifully plated Kawarma immediately. Serve with an abundance of warm pita bread, crispy pita chips, or your favorite Middle Eastern flatbreads such as lavash. Encourage everyone to scoop up the delicious layers and savor the delightful interplay of textures and flavors. This dish is truly best enjoyed fresh and warm.

Frequently Asked Questions About Kawarma
Here are answers to some common questions to help you master and enjoy your Lebanese Kawarma:
Can you make Kawarma with meat other than lamb?
Absolutely! While ground lamb is traditionally favored for its rich flavor and tender texture, Kawarma is quite versatile. You can certainly substitute other meats based on your preference or what you have available. The bold and aromatic spice blend used in this recipe is specifically formulated to complement lamb beautifully, so you might consider minor adjustments to better suit your chosen protein.
Ground Beef is an excellent and widely available substitute. Its robust flavor pairs wonderfully with the Middle Eastern spices. If using leaner beef, you might add a touch more olive oil to ensure the meat remains moist. Ground Chicken or Turkey also make for superb, leaner alternatives. When using poultry, you might find the flavor benefits from a slightly more generous hand with the spices, and ensure not to overcook to keep it tender. For a truly unique and delicious twist, consider a vegetarian Kawarma using sautéed, finely chopped mushrooms (such as cremini or portobello) or even plant-based ground meat alternatives, seasoned with the same vibrant spices.
How long is Kawarma good in the fridge?
Homemade Kawarma, when properly stored, will remain fresh and delicious in your refrigerator for up to 4 days. To ensure optimal freshness and safety, it’s best to store the spiced ground meat mixture separately from the hummus if you anticipate leftovers. Place the cooled meat in an airtight container and refrigerate it promptly after cooking. Similarly, store the hummus in its own sealed container. This separation helps maintain the individual textures and prevents the hummus from absorbing too much flavor from the meat. When ready to enjoy again, you can reheat the meat gently and combine it with room-temperature or slightly warmed hummus.
Should Kawarma be eaten warm or cold?
The serving temperature of Kawarma is largely a matter of personal preference, offering a delightful experience either way! In my opinion, the seasoned ground lamb is truly at its best when served warm, as the heat amplifies the aromatic spices and keeps the meat tender and juicy. However, I know many people who enjoy their hummus with lamb at room temperature or even chilled, especially during warmer months. My personal preference leans towards pairing room-temperature hummus with a freshly cooked, warm lamb mixture. The contrast in temperatures adds an intriguing dimension to each bite.
There’s an undeniable comfort and satisfaction in warm Kawarma served alongside warm pita bread – it’s a match made in culinary heaven. However, don’t limit yourself! Other excellent bread substitutes include fluffy naan, crispy pita chips for scooping, or even light and airy lavash bread. Whichever way you prefer it, Kawarma promises a flavorful and memorable dining experience.
